Actually, mine has her heart set on the mermaid tank kit she saw at Aquarium Depot awhile ago, which is pink, of course, and comes with pink gravel and a mermaid ornament. Maybe even a pink plant or two, I don't remember. The thing is only about 4 or 5 gallons, though, so I keep trying to convince her a bigger tank would be a better choice (and we could still do the pink gravel, etc). But she just sighs heavily and says she knows there aren't very many fish that would work in such a small tank, but she wants it anyway. Her birthday's coming up in a couple months, I may give in.
Anyway, have fun with your daughter's tank! Try not to overdose on all that pink! I agree that endlers are a good choice for a child's tank. They're very hardy, and kids love to find baby fish in the tank.
