I'm actually going to be bringing large cheesecake brownies because I didn't have any mini cupcake wrappers and I already made them last night.

There are no happy endings.
Endings are the saddest part.
So just give me a happy middle
And a very happy start.

Re: Food for February meeting
I can bring a 12 pack of drinks - what else do you need (not having been to a meeting before I am not sure what you do for food)

It's a typical pot luck. Bring whatever you think is yummy. There are usually anywhere from 20 - 40 people at each meeting, and I must say that this group is not shy about eating!turfboss wrote:I can bring a 12 pack of drinks - what else do you need (not having been to a meeting before I am not sure what you do for food)

I'm bringing Rajma Masala, an Indian chili (meatless). It sounds like we have plenty of cups and spoons.

Re: Food for February meeting
Here is the recipe for the "Indian chili" I made for the meeting:
4 16oz cans of whatever beans (I used lentils, white beans, pintos and kidney beans)
2 tablespoons coriander seed
1 teaspoon cumin seed
2 large sweet onions, cut for the food processor
2 large sweet onions, finely chopped
1 inch ginger, peeled, chopped
2 2" red thai chili peppers, seeds removed, chopped
3/4 teaspoon turmeric powder
black pepper, to taste
1⁄4 teaspoon ground cinnamon
2 tablespoons vegetable oil
~ 21 oz mango pulp
salt to taste
lime juice to taste (I used approx 2 tsp. and would have added more if I had more.)
1-2 cups water
Cilantro to garnish
Remove 1 cup of beans, puree and keep aside.
Lightly toast coriander and cumin seeds in a dry pan and grind in a spice grinder.
In a food processor or blender grind 2 onions, ginger, coriander seeds, chili peppers, cumin, turmeric, pepper, and cinnamon to a very fine paste.
Heat oil in a large saucepan over medium-high heat.
Add the chopped onions and saute until golden brown.
Add the ground paste and saute.
Add the beans (not the crushed beans), stir for a while and add salt and mango pulp.
Add the crushed beans and water if the chili is too thick.
Mix well and bring to a boil, twice.
Would be great with cilantro on top.
Makes approx. 20 servings.
